The perfect meals to cook for Mother’s Day!

One of the most stressful days of the year is Mother’s Day, but why? We are all desperately making sure that we have the perfect gifts or do the perfect surprise for our mothers. Not only do we want to impress them, but we want to make this day special for them. And what better way to do that than to cook a few easy but perfect meals for them!

Start of the day by serving some delicious pancakes, covered in Nutella along with strawberries and bananas, to your mother in bed! Serve this with a cold and refreshing fruit smoothie for a final touch.

Ingredients
1 ½ cups all purpose-flour,
1 tsp salt
3 ½ tsp baking powder
1 egg
2 tbsp butter, melted
1 tbsp white sugar
1 ¼ cups milk 

Instructions
Mix the flour, sugar, salt and baking powder in a large bowl. Then add the egg, butter and milk. Keep mixing until the mixture is smooth and thick.
Pour small amounts of the batter into a frying pan and cook until both sides of the pancakes are brown. 
Serve the pancakes with any sauce of your choice, preferably maple syrup or Nutella, along with fruits.

What are two things that every brown mom loves? Pakoras! Make some of these for your mother to snack on throughout the day. Serve it with some yummy green chutney, chaat masala and trust me, she’ll love it. Cooking pakoras is not only quick, but it is easy too.

Ingredients
1 small onion
1 small potato
Green chili
Green coriander
1 tsp cumin
1 tsp red chili, crushed
½ tbsp whole coriander seeds
½ tsp khatai powder
1/8 tsp baking powder
1 tsp corn flour
1 ¼ tsp salt
1 cup gram flour
¾ cup water
Oil 

Instructions
In a large bowl, mix the chopped onion, large slices of potato, green chili and green coriander.
After mixing, add coriander seeds, khatai powder, cumin, the crushed red chilis, baking soda, corn flour, salt and gram flour.
While mixing add water until the texture is smooth.
Add tbsp of the mixture, making sure there is potato, into the frying pan and cook until it turns golden brown in color and is crispy.
Before you serve, make sure to drain all the oil out.

Why not end the day with a yummy, chocolaty, fudge brownie topped with ice cream? This is the perfect desert to serve during the last few hours of Mother’s Day. Its thick, moist and most importantly, oozing with chocolate!

Ingredients
½ cup butter
1 cup white sugar
2 eggs
1 tsp vanilla extract
1/3 cup unsweetened cocoa powder
½ cup all-purpose flour
¼ tsp salt
¼ tsp baking powder

Instructions
Begin with preheating your oven to around 350 degrees.
First melt the butter, then in a large bowl mix it with the sugar, eggs and vanilla extract.
Add cocoa powder, salt, and baking powder to the bowl and keep mixing until the batter is thick.
Pour the batter into a pan and bake it for around 30 minutes.
After the brownies are baked, add chocolate chip cookies and serve it with a school of vanilla ice cream.
