Super Easy Recipe For Stuffed Chicken

by Rida Khalid

As we all are in quarantine and we are missing our favourite dishes from our most favourite restaurants, here’s a very easy and simple recipe for scrumptious stuffed chicken which you can make at home and enjoy!

INGREDIENTS
Stuffed chicken
1 whole chicken boneless breast
Salt ½ teaspoon
Black pepper 1 ½ teaspoon
Garlic powder ½ teaspoon
Cheddar cheese 4 tablespoons
Mozzarella cheese 4 tablespoons
Oregano ½ teaspoon
1 egg
Breadcrumbs ½ cup
All purpose flour ½ cup
Oil for frying

Sauce
1 ½ cup Milk
All purpose flour ½ teaspoon
Black pepper ½ teaspoon
Oregano ½ teaspoon
Salt ¼ teaspoon
Cheddar cheese 2 tablespoons
Mozzarella cheese 2 tablespoons
Spinach 4 leaves
Olives and Mushrooms (optional)

METHOD
Stuffed chicken
Cut the whole breast into 2 equal halves.
Take a large bowl, put chicken breasts in it and add garlic powder, salt and black pepper and marinate it for 2 hours.
(Tip: cut a thin layer of chicken from the back part of chicken to make it thinner, it will make it easier to cook it well without keeping it hard or raw)
Take a small bowl and mix oregano and both types of cheese.
After marinating, make a small cut on the side of the breasts and put knife in to make it deeper and wider from inside. Be careful that the knife doesn’t pass through the other side of chicken.Fill the chicken breasts with cheese batter, equal quantity in both, and seal the cut with a mixture of water and flour.
Now take 3 plates, add flour in one, breadcrumbs in second and beat an egg in the third.
First put the chicken in egg, then in flour, then again in egg, then in breadcrumbs.
(Tip: for a better taste you can do the breadcrumb coating twice by repeating it in egg and breadcrumbs)
Take a frying pan and add oil in it, wait until hot.

Shallow fry the chicken breasts in the oil (on low flame so that it cooks properly) until both sides turn golden brown.

Sauce
Take a frying pan and put in on stove at medium flame.
Add milk and cheese in it and mix it well.
Now add black pepper, salt, oregano, spinach, olives and mushrooms in it.
After cooking for 2 minutes add ½ teaspoon all purpose flour in it.
Cook it for further 3-4 minutes on low flame until a little bit thick.
(Caution: be very precise with the quantity of flour-maida, as the increased amount will make the sauce very thick)

Serve the stuffed chicken with sauce, you can also serve boiled vegetables with it.
