STRAWBERRY LIME MOJITO MOCKTAIL

Ingredients
12-14 Strawberries, stems removed
8 Large mint leaves, – if they are on the small size add 12 mint leaves
2 1/2 cups Sprite*
1/8 cup Fresh lime juice*
Method
Add strawberries and mint leaves to a pitcher (doesn`t have to be a fancy one). Using a muddle (or a wooden spoon), crush the strawberries and mint leaves. After crushing the strawberries and mint leaves, allow them to extract the juices. Be wary as you don’t want to tear the mint leaves to pieces.
Add the lime juice and Sprite to the pitcher. Stir.
Fill glasses with crushed ice (optional). Pour the virgin mojito mixture over the ice. Garnish with extra mint and lime slices. Serve immediately

Virgin Mojito

Ingredients
Sprite 300 ml
Lemon juice 4-5 tbsps
Mint leaves 1/4 cup.
Sugar syrup 3 tbsp
Ice cubes 9-10
Method
Prepare sugar syrup by heating 1 1/2 tbsps of sugar in 1/4 cup water on low to medium flame. Let the sugar dissolve completely. Allow to simmer for a little less than half a mt. Turn off flame and bring the sugar syrup to room temperature.
Take a serving glass, add 7-8 fresh mint leaves, a tbsp of sugar syrup and a little more than a tbsp of lemon juice. Use a muddler or a spoon to gently crush or bruise the mint leaves.
Slowly pour the chilled sprite into the glass till it almost reaches the brim and stir to mix.
Garnish with a slice of lemon, a small sprig of mint leaves and add 2 to 3 ice cubes in each glass. Serve.

Sunset Glory: Pineapple Mocktail

Ingredients
1 cup pineapple juice
2 cups lime lemon soda such as Sprite
2 tablespoons rose syrup or Roohafza
1 cup crushed ice
2 pineapple wedges for decoration (optional)
2 small sprigs mint leaves for decoration (optional)
Method
Take two tall glasses. In order to get nice color gradient, first put crushed ice in the glasses.
Pour pineapple juice on ice. Then add Sprite.
Over this add rose syrup. Being the heaviest it will settle down at the bottom.
Stir the mixture a little bit so that the contents get slightly mixed, but still they can be seen separately.
Decorate the glass with pineapple wedges and mint leaves, or with decorative straw of your choice.
Serve chilled.
